DIRECTIONS
Chop the broccoli into small florets and steam, boil, or microwave for 8-10 minutes. Add the peas for the final 5-8 minutes and cook until soft.
Finely chop your mint and set it to one side.
Once cooked, add your broccoli, peas, mint, splash of cooking water and yoghurt to a blender (or mash if moving on consistency) and blend to your desired consistency.
Freeze extra portions in icecube trays, or flat in a freezer bag to get out another day
Top tip - this also makes a great green pasta sauce!
