Apricot energy balls

Any toddler parent will know that snack requests can be endless. Why not try these energy balls packed full of fibre, healthy fats, and even the option of some fermented foods (kefir)—a triple bonus for your toddler’s little gut friends?

2 large handfuls of dried apricots(about 20) | |
3 Weetabix/Wheat Biscuits | |
1 tsp vanilla extract | |
1 tbsp almond or cashew butter | |
100ml milk of choice or kefir | |
Sesame seeds, chia seeds, popped quinoa or desiccated coconut for coating |
Directions

1. Boil the kettle, then pour around 100ml of water into a bowl, add the vanilla and leave the apricots to soak for at least 30 minutes (or longer)
2. After 30 minutes, drain the water, add the soaked apricots, Weetabix, nut butter and milk to a blender and blitz. You should end up with a sticky paste. Transfer this to a baking tray or bowl lined with clingfilm and pop into the fridge for about an hour
3. Once cooled, the mixture is easier to handle. Roll into balls and coat in your covering of choice - sesame seeds work well, or ground nuts, other seeds or desiccated coconut
