1 Tablespoon Olive Oil | |
1Finely Chopped Aubergine | |
1Finely Chopped Courgette | |
1Finely Chopped Green Pepper | |
1Can Chopped tomatoes | |
1/2Teaspoon Oregano | |
1Can Lentils, drained and rinsed | |
Couscous as packaged |
Directions

Heat the oil in a frying pan. Add the aubergine, courgette and green pepper and fry for 10-15 minutes until soft
Mark as complete

Add in the tinned tomatoes, lentils and ~100mls of water
Mark as complete

Allow to simmer for 10 minutes

Gently mash the ratatouille or place it in a food processor to get to the desired texture
