Lentil Ratatouille & Cous Cous

This gut loving baby friendly recipe packs in four different veggies, alongside cheap and versatile lentils for a perfectly balanced baby meal.

Ingredients

Adjust Servings
1 Tablespoon Olive Oil
1Finely Chopped Aubergine
1Finely Chopped Courgette
1Finely Chopped Green Pepper
1Can Chopped tomatoes
1/2Teaspoon Oregano
1Can Lentils, drained and rinsed
Couscous as packaged

Directions

Heat the oil in a frying pan. Add the aubergine, courgette and green pepper and fry for 10-15 minutes until soft
Mark as complete
2.

Add in the tinned tomatoes, lentils and ~100mls of water
Mark as complete
3.

3.

Allow to simmer for 10 minutes
Mark as complete
4.

4.

Gently mash the ratatouille or place it in a food processor to get to the desired texture
Mark as complete
5.

Serve with couscous or any other grain of choice
Mark as complete
