Pea and Lentil Fritters

The fritters are packed with fibre and iron – two important nutrients for little tummies. They are also free of milk and can easily be made egg- and gluten-free. Serve them cut into strips for fantastic finger food for babies – and great for sharing with adults.

200g Green peas | |
1Drained tin Green lentils | |
100g Chickpea flour (option to use plain flour or wheat/gluten-free flour) | |
1 Egg (*option to use chia/flax egg) | |
1Tablespoon Oil | |
1Teaspoon Cumin | |
1Teaspoon Tumeric | |
1/2Teaspoon Corriander |

Cook your green peas following the packet instructions

In a large bowl, mix together the green peas and drained lentils - you may want to remove any moisture with some kitchen roll or tea towel.

Using a masher or the bottom of a heavy glass TO slightly mash or break down the peas and lentils.

Add in flour and spices, coating the pea and lentil mix well.

Beat the egg and add to the mixture to create a batter.

Heat the oil in a pan on medium to high heat. Using a tablespoon (or icecream scoop), place large or small rounds of the mix into the pan.
