Tuna and Mushroom Patties by Happy Tums

These patties are a great source of fibre and contain protein and iron. For those struggling with a fussy eater, these are so fun to make together! They can be moulded into any shape you want – you choose!

Ingredients

Adjust Servings
1tbsp Olive Oil
3 Spring Onions, chopped
150g Chopped Mushrooms
2cloves Garlic, crushed
400g Chopped Spinach Frozen is fine!
Small can Sweetcorn, drained
400g Cooked Brown Rice
100g Breadcrumbs
300g Mature Cheddar, grated
2tins Tuna in Spring Water, drained

Directions

1.

Preheat

Preheat the oven to 180°c
Mark as complete
2.

Fry

Heat the oil in a large saucepan and fry the onions, garlic and spinach for 3-4 minutes (longer if using frozen spinach). Set aside.

Mix

In a large bowl, add the rice, sweetcorn, breadcrumbs, cheese, tuna and egg, then mix together.
Mark as complete

Combine

Add the spinach mixture to the bowl and combine.
Mark as complete
5.

Shape patties

Brush some olive oil onto a baking tray. Shape the mixture into patties and place onto the tray.
Mark as complete
6.

Bake

Bake in the oven for 20 minutes or until golden.
Mark as complete
7.

Serve

Serve the patties warm or cold. Can be frozen.
Mark as complete
