200g broccoli | |
360ml plain yoghurt | |
50ml oil | |
1 large egg | |
50g cheese | |
225g self-raising flour |
Directions

Cook
Cook the broccoli (steaming is best).
Mark as complete

Combine
Mix yogurt, oil and egg.
Mark as complete

Chop
Chop broccoli and add to mix.
Mark as complete
4.
Grate
Crumble or grate the cheese.
Mark as complete
5.
Fold
Fold the flour into the liquid mixture. Add a little milk if the mix is too dry.
Mark as complete
6.
Divide
Divide equally into greased muffin tins (or use a silicon muffin tray) – makes around 12 regular or 24 mini muffin.

7.
Bake
Bake for around 12-15 minutes at 190 degrees (fan) or until golden brown and spring back to the touch.

Notes
These muffins can be frozen and will defrost on the side or in the microwave/warm oven.
